The First Real Fall Day

As I blog this I’m standing in my kitchen frying up eggplant for some yummy eggplant parmesan.  Wanna know how to make it?  Go to my old post here and instead of topping them with sauce and cheese individually, layer them lasagna style in a 9×13 baking dish alternating with eggplant, sauce, cheese….eggplant, sauce, cheese etc…top layer should be cheese and bake at 375 covered with tin foil for approx 30 minutes.  YUM.

I’m about to start chopping garlic for my sauce but before that I wanted to drop in and say it’s finally fall here in north Texas!  Yesterday’s high was in the low 80’s and today it is barely breaking 60.  Anyone who knows me knows I hate cold weather but this is nice.  I went out grocery shopping this morning in my fuzzy boots, jeans and fleece jacket.

Tonight it’s dinner at my parents’ house.  We’re bustin’ out the fire pit and wine.  Gonna be a good time!  I even brought out Mr. Pumpkin candle today.  Isn’t he cute?  He smells pretty good too.

  2. 60? That’s a heat wave. Freeze warning tonight, cover tender vegetation!! 48 just now, almost time to fire up the geothermal heating… Have a blast tonight.

    ahhh I love fall, even if sometimes I freeze my butt off, what’s a little less butt right? yesterday I got up and the temp was 27, so I could use 60’s. Today not so bad, but at night we get good frost now. Enjoy your weekend!

    Ugh, now I want some eggplant parmigiana!
    It started out around 75 degrees this morning. By 3pm, it was 60. Cold front came through. What can ya do? Summer is over. But I do love the fall colors. We had our fire pit going, too! Cooked some shrimp on it!


  5. I was just out doing my weekly grocery shopping. The air was crisp (down to 28 last night), the sun was shining in a nearly cloudless sky, and the trees were gorgeous! Fall in the upper Midwest is just wonderful!! (I even managed to avoid killing the squirrel that ran across the road right in front me me.)


    • I can’t say that this area of TX is gorgeous because it’s really ugly but this weather was perfect this weekend. I didn’t even mind the cold, and I’m not a cold weather person!
