As I blog this I’m standing in my kitchen frying up eggplant for some yummy eggplant parmesan. Wanna know how to make it? Go to my old post here and instead of topping them with sauce and cheese individually, layer them lasagna style in a 9×13 baking dish alternating with eggplant, sauce, cheese….eggplant, sauce, cheese etc…top layer should be cheese and bake at 375 covered with tin foil for approx 30 minutes. YUM.
I’m about to start chopping garlic for my sauce but before that I wanted to drop in and say it’s finally fall here in north Texas! Yesterday’s high was in the low 80’s and today it is barely breaking 60. Anyone who knows me knows I hate cold weather but this is nice. I went out grocery shopping this morning in my fuzzy boots, jeans and fleece jacket.
Tonight it’s dinner at my parents’ house. We’re bustin’ out the fire pit and wine. Gonna be a good time! I even brought out Mr. Pumpkin candle today. Isn’t he cute? He smells pretty good too.
